Our new premises are specifically designed to allow us to process fresh fish and seafood to the desired requirements of the customer.

In the ‘wet fish room’ we fillet, clean, scale, skin or trim the fresh fish to order. Then it is boxed and iced ready for delivery or collection. In this area we also prepare the raw fish for salting/brining and smoking.The next stage is the salting or brining of the fish for smoking.

This takes place in the ‘salt room’. After this it goes to the ‘smoke room’ and is placed in our smoking kilns. The oak fires are lit and the fish is monitored throughout the process until it is ready.

Once the smoking process is over the fish is then chilled and ready for consumption. Some fish however is prepared for packaging which usually involves skinning and slicing.

Currently we deliver daily (Monday to Saturday) to all parts of the Island with 5 refrigerated vehicles.

We also have a mobile shop that regularly visits Island centres and offers a home delivery service, supplying those customers unable to visit our main premises.
